The producer has done a great effort in the past years, to improve the quality of his production; his coffee, after picking, is delivered to the mill to assess the cherry (take Brix) and decide on the process depending on space and what the producer has done already. This coffee is cleaned and taken to the beds, where it is dried for between 20 -30 days, being turned hourly.
