La Tortuga is a unique gem! Best suitable for espresso, this washed coffee will amaze you with black cherry, almond and tangerine notes. From the Galapagos, the beautiful Ecuadorian archipelago of volcanic islands in the Pacific Ocean, this lot is a particular mix of Typica and Bourbon coffee plants, grown in five hectares in the shade of Cedrela plants and other native shade trees.
The producer is a member of The Cooperativa de Cafetaleros de Galapagos, including more than 80 producers. The Cooperativa was founded back in 1997 with the goal to protect the coffee sector while conserving the unique Galapagos nature and environment. The producer uses the traditional fully-washed method for processing in his micro-mill and dry ferments his wet parchment for 14 to 18 hours. It is then sun-dried in parabolic covered patios on raised drying beds.
